Grilled Bacon-Wrapped Chicken

Not just for bacon fans, these chicken packets hold a cheesy surprise.

Preparation level: Supervision required - sharp knife, hot surface needed

Ingredients:

With each chicken piece, use a sharp knife to cut partway through the center of the chicken breast, creating a "pocket" inside the meat. Fill with 2-3 cubes of Cheddar Cheese. Wrap each piece of chicken with 2-3 slices of bacon, wrapping over the opening in the chicken breast. Secure bacon end with a toothpick.

Preheat the grill to medium heat and place the chicken pieces away from any open flame. Cook for 25-30 minutes, turning regularly to keep bacon uniformly crisp. Once a meat thermometer shows chicken is fully cooked (the cheese will have begun leaking out a bit), brush with BBQ sauce and cook an additional 3-4 minutes per side.

Serve with your favorite side and enjoy!

(These are best on the BBQ but in a pinch, using your broiler works too. I line my broiler pan with foil to make clean up a little easier.)

*Remember when cooking with chicken, or any meat, to wipe down your surfaces and dishes well before and after preparing the food to prevent possible cross-contamination. The rule in our kitchen is that any surface that has touched raw meat (including our hands!) needs to touch soap and hot water before it contacts anything else. A clean kitchen is a healthier kitchen!
