I always like this salad for lunch in the winter. The colors and avocados make me think of sunshine and warm places. In a pinch, Iíve used canned chicken or salmon.

Slice and cube the avocado, removing the large center stone. Toss the lettuce in a serving bowl and top with chicken, avocado, and orange segments. Drizzle with poppy seed salad dressing and serve. Yum!
